White Chocolate Macadamia Nut Cookies with Rubbermaid

With Mother’s Day coming up, I’m all about sharing a little sweetness with the special Moms in my life! Giving baked goods is a fun way to show someone you care. Today, I’m sharing my White Chocolate Macadamia Nut Cookie Recipe with you as well as explain why I only trust Rubbermaid EasyFindLids containers to keep my baked goods as fresh as can be!

White Chocolate Macadamia Nut Cookie Recipe

Ingredients:

  • 1 1/4 cups Butter (cubed and cold)
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 2 cups cake flour (this makes the cookies moist, however you can use all purpose if you can’t find cake flour)
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • pinch of salt
  • 1 cup white chocolate chips
  • 5-6 oz chopped macadamia nuts

First, preheat your oven to 350 degrees. In a large bowl, using a mixer, blend the butter until the cubes come together into one clump. Pour in both sugars and mix together. Next, add in 2 eggs and the vanilla extract. Now it’s time for the dry ingredients! Mix in both flours, baking powder, baking soda and pinch of salt. Once that is blended thoroughly, add in the white chocolate chips and macadamia nuts.

After I make the cookie dough, I like to let it sit in the refrigerator for 20-30 minutes. You can skip this step, if you are on a time crunch!

Place your cookie dough on a non-stick baking sheet and/or on top of some parchment paper. Bake your cookies for approximately 10-12 minutes. Tip: Take the cookies out when they are little underdone. They will continue to bake on the sheet once out of the oven.
