Mini Summer Berry Galettes with Rubbermaid

Summer is arriving oh so quickly and that means lots of backyard Bbq’s and Summer gatherings! Today, I wanted to share my Mini Summer Berry Galettes Recipe with you. It’s easy, delicious and the perfect bite size. I like to make these ahead of time and store them in my Rubbermaid EasyFindlids to lock in that out of the oven freshness. Read on for the recipe and learn about my favorite Rubbermaid products!
Mini Summer Berry Galette Recipe
- 1 package of store bought pie crust
- 1 cup raspberries
- 1/2 cup blackberries
- 1/2 cup blueberries
- 1 teaspoon cornstarch
- 2 tablespoons sugar
- squeeze of juice from half a lemon
- 1 egg (for egg wash)
- fresh mint to garnish
Preheat your oven to 375. Get out a large piece of parchment paper and roll out your store bought crust. Using a cookie cutter, or in my case, a cup, stencil out circles into the crust and set aside.
In a bowl, mix together all berries, sugar, cornstarch and lemon juice. Scoop the berry mixture 0n to the pie crust circles and fold over all edges of the crust. Make sure to press them firmly together so they don’y come undone during baking. Brush egg wash on all crust and stick in the oven and bake for 12-15 minutes.
Add fresh mint for a garnish and voila, you have yourself some tasty mini summer berry galettes!

SAVE AND SHARE THIS RECIPE! This festive #stpatricksday recipe is the perfect lunch/snack for everyone! Being the Irish gal that I am, I like to make fun recipes for the kids and this one is s favorite.
•puff pastry sheets
•corned beef (or you can use pastrami)
•Dijon mustard
•Swiss cheese
•clover cookie cutter
Preheat your oven to 400 degrees. Use your cookie cutter on the puff pastry. Add Dijon mustard, corned beef and Swiss cheese to half the clovers. Put the remaining puff pastry on top. Use a fork to put down the sides and seal the puff pastry. Then, brush egg wash over them. These will bake for approximately 20 min. Trust me…..these are super easy to make and soooo yummy! #puffpastry

SAVE AND SHARE MY MOST VIEWED RECIPE ! This is one of my favorite and most watched recipes and for good reason! My Ham and Cheese Croissant Bake is SOOOO easy to make and perfect for brunch! This can also be frozen and eaten later! Don’t take my word for it….make it and let me know how fast it was devoured.
•4 large croissants
•12-16 oz of cubed ham
•6 oz of shredded gruyere cheese
•6 oz of shredded cheddar cheese
•1/2 cup chopped chives
•6 eggs
•1 cup half and half
•1 tsp. honey
•1 tsp. Dijon mustard
•salt and pepper
Preheat your oven to 375. In a baking dish (spray with non stick spray) add in croissants, ham, cheese and chives. In a separate bowl, whisk together the eggs, half and half, honey, mustard and salt and pepper. Pour the egg mixture over the bake and press down with a fork. Cover with foil and bake for approximately 50 min. This is such a great family recipe and feeds a good amount of people.
