When I think of activities to do in the Summer, camping is always at the top of the list! Long ago, one of the first weekends away Neil and I took together was camping up near Yosemite. I look back on those memories fondly and have always been one up for adventure! Since my surgeries, camping hasn’t really been in the cards for us as a family; even though its something we would love to do. Listen, I can definitely rough it, ha. What a whirlwind weekend full of fun! I can honestly say Neil and I had the time of our lives visiting Denver, Colorado. This was the first trip to Denver for both of us and it turned out to be a trip we will fondly remember for years to come. Our stay at the Renaissance Downtown Denver was amazing and today on CCG, I wanted to gush about all the details of our fun-filled weekend getaway there enjoying the “Mother’s Love” package.

This past weekend it snowed here in the foothills and now today it’s going to be 80…. Today will be spent gardening. SAVE AND SHARE THIS RECIPE! This festive #stpatricksday recipe is the perfect lunch/snack for everyone! Being the Irish gal that I am, I like to make fun recipes for the kids and this one is s favorite.
•puff pastry sheets
•corned beef (or you can use pastrami)
•Dijon mustard
•Swiss cheese
•clover cookie cutter
Preheat your oven to 400 degrees. Use your cookie cutter on the puff pastry. Add Dijon mustard, corned beef and Swiss cheese to half the clovers. Put the remaining puff pastry on top. Use a fork to put down the sides and seal the puff pastry. Then, brush egg wash over them. These will bake for approximately 20 min. Trust me…..these are super easy to make and soooo yummy! #puffpastry

SAVE AND SHARE MY MOST VIEWED RECIPE ! This is one of my favorite and most watched recipes and for good reason! My Ham and Cheese Croissant Bake is SOOOO easy to make and perfect for brunch! This can also be frozen and eaten later! Don’t take my word for it….make it and let me know how fast it was devoured.
•4 large croissants
•12-16 oz of cubed ham
•6 oz of shredded gruyere cheese
•6 oz of shredded cheddar cheese
•1/2 cup chopped chives
•6 eggs
•1 cup half and half
•1 tsp. honey
•1 tsp. Dijon mustard
•salt and pepper
Preheat your oven to 375. In a baking dish (spray with non stick spray) add in croissants, ham, cheese and chives. In a separate bowl, whisk together the eggs, half and half, honey, mustard and salt and pepper. Pour the egg mixture over the bake and press down with a fork. Cover with foil and bake for approximately 50 min. This is such a great family recipe and feeds a good amount of people.
