Recently, Neil and I celebrated our 11 year anniversary. What better way to celebrate than a weekend getaway just the two of us at the beach! We had a BLAST in Huntington Beach and our stay at the ShoreBreak Resort was everything we had hoped for and more. Read on to check out just how fun this place is!
ShoreBreak Resort is located right in the heart of Surf City USA. Across the street from the beach and pier, ShoreBreak is a beachy chic hotel with a fun, laid back vibe. It’s close to oodles of yummy eateries as well as a variety of fun shops where you can do some legitimate retail therapy!
It took us a little over 5 hours to drive in from the Bay Area. I actually don’t mind driving on these road trips with Neil. It gives us time to talk and laugh together even if it’s while we are stuck in traffic. I welcome it! The last hour of the drive was along the ocean and I definitely won’t complain about that!
Upon arrival at the ShoreBreak Resort in Huntington Beach, we were greeted warmly and given the low down on all things ShoreBreak. We happen to arrive just in time for Happy Hour where the hotel serves complimentary wine and beer on tap! Did I also mention smores?!?! So far, we were off to a fabulous start! The hotel lobby opens up to an amazing courtyard where you can play life size chess games, play foosball, and ping pong! Neil and I looked at each other and smiled. This was going to be a fun weekend!






Our room was spacious, bright and colorful and had a fantastic view of the ocean and pier. The staff had a delicious charcuterie board as well as cocktails waiting in the room. How refreshing! I also want to mention how awesome the bathroom was! Complete with a large soaking tub, HUMONGOUS shower for two and an assortment of bath salts/products, this bathroom was one of our favorite hotel bathrooms ever! The shower is so big, that while I was showering, Neil was able to sneak in like a ninja and turn the second shower head on, spraying me with cold water!!!! Kids, don’t try this at home! After the initial shock, we laughed. I’ll pay him back when he least expects it!








We freshened up and headed down to Pacific Hideaway for cocktails and dinner. Pacific Hideaway is the AMAZING restaurant located at the Shorebreak Resort. This adorable restaurant has an atmosphere with a mix of Bali, a smidge of Tulum and very Southern California. Their menu featured plates like ahi tuna poke, delicious tacos and larger plates that include whole fried Tai Snapper. We were seated on the outdoor patio where we could hear the waves crashing on the shore as well as watch the sunset! I ordered the “Stacy’s Mom” cocktail while Neil ordered his usual, an old fashioned. Stacy’s Mom has got it going on….. Once I saw that cocktail, I couldn’t stop this tune from entering my mind. In fact, I’m singing this out loud in an empty house as I type! The drink was delicious and I followed it up with a second! The crab fritters and sticky wings are a must if you come here! So so goooooood.









After a quick walk along the beach, we headed back up to our room for the night. The next day, we got up to eat an early breakfast at Pacific Hideaway. I am a huge seafood lover, so of course I ordered the crab toast. I also ordered the Hideaway Hash Benny which is a customer favorite here. Neil opted for the SoCal Breakfast Burrito but in a bowl. Everything was scrumptious and we devoured it all!





After breakfast, we changed into our swimwear and walked across the street to the beach. Did you know that ShoreBreak has all the beach necessities you need? They have chairs, umbrellas, towels, even sunglasses! No need to drag that stuff along on your trip! ShoreBreak has you covered. One thing we didn’t do and I’m super bummed about is renting their complimentary cruiser bikes! Next time!
We spent the majority of the day on the beach. What can I say, I LOVE the ocean, it’s my happy place.




After watching the sunset on the beach, we actually met up with one of my long time friends from school and walked over to the posh shopping center, Pacific City, where we met for drinks at The Bungalow and spent some time catching up. Neil and I did a little window shopping and walked back to ShoreBreak for a late dinner at Pacific Hideaway yet again (the food is that good). After filling our bellies with mojitos, chips and guacamole and short rib tacos, we were ready to call it a night.
The next day, we packed up and said good bye to ShoreBreak. Sad to go, we both wished we had an extra night we could have spent here. It’s always bittersweet heading home from these little trips. Of course we miss the kids, but it’s so much fun when Neil and I get to spend time together one on one.
My old friend asked us over drinks what the secret to our successful marriage was. Neil and I both looked at each other and at the same time said, these trips! We are not perfect nor do we pretend to be. We have had our share of ups and downs, that is FOR SURE. I would be lying if I said we have never argued or stubbornly didn’t talk to each other for a couple days. Luckily, Neil is ridiculously handsome and funny. Ha ha! After the intense recovery from my surgeries and the aftermath that proceeded them, we really have been stronger than ever. One thing we talked about often while I laid in that hospital bed, was we wanted to travel more and spend more time together. This is a vow we have embraced even if it’s only for small weekend getaways like this! They are so important!
I want to thank the ShoreBreak Resort and their amazing staff for such a fantastic stay. The room, the food, the atmosphere….it was perfection! We can’t wait to visit again. Maybe next time with the kids (we’ll see…)

I debated jumping on the bandwagon to share my 2016 throwback. In all honesty, 2016 was the hardest year of my life. It’s something that I’m reminded of daily in this never ending cycle of chronic pain and illness. For those that are new here, in 2016 I underwent 3 surgeries within 4 days. My 14 level spine surgery consisted of 2 surgeries going through my back and side, and then I needed an emergency bowel resection 3 days later due to my colon twisting and flipping on itself. When I woke up from my spine surgery, I immediately moved my right foot and tried to then move my left. It turned out, they knicked my spinal cord and damaged it. I had no feeling in my left leg or foot. Didn’t know if I was moving it and it felt like nothing was there. I remember immediately panicking and because I still had a tube in my mouth, they gave me a paper to write down what was wrong. Drs came in and told my husband and I that they weren’t sure if I’d walk again and definitely sure I wouldn’t be dancing. I lost 25 lbs, a Picc line was put in to try and get me any nutrition. I threw up bile in bucket after bucket.
I didn’t see my kids for 3 1/2 weeks and then had to be moved to a nursing facility. Once home, I had nurses and PT that would come to our house because staying in that facility and not seeing my kids drove me insane (my youngest was only 17 months old). Neil had to shower me, and wipe my butt 🙈. I went through 18 months of PT pushing myself to prove them all wrong. When I think about the last 10 years (and 2016 in particular), it has been a nonstop uphill battle for me. During that same year, we learned that both our daughters would then be diagnosed with the same thing. This is why I keep pushing forward no matter how I feel mentally or physically. I need to show these kids that mama can handle it and I want them to remember how strong I’ve tried to be because some day they may be faced with this same decision. I played this song on repeat laying in the hospital.

SAVE AND SHARE MY MOST VIEWED RECIPE! This is one of my favorite and most watched recipes and for good reason! My Ham and Cheese Croissant Bake is SOOOO easy to make and perfect for brunch! This can also be frozen and eaten later!
Don’t take my word for it...make it and let me know how fast it was devoured.
•4 large croissants
12-16 oz of cubed ham
•6 oz of shredded gruyere cheese
•6 oz of shredded cheddar cheese
•1/2 cup chopped chives
•6 eggs
•1 cup half and half
•1 tsp. honey
•1 tsp. Dijon mustard
•salt and pepper
Preheat your oven to 375. In a baking dish (spray with non stick spray) add in croissants, ham, cheese and chives. In a separate bowl, whisk together the eggs, half and half, honey, mustard and salt and pepper.
Pour the egg mixture over the bake and press down with a fork. Cover with foil and bake for approximately 50 min. This is such a great family recipe and feeds a good amount of people. So before ya come for me with how much cheese is used ( remember that!

•mini muffin pan
•store bought puff pastry
•brie cheese
•cranberry sauce
•fresh rosemary
Preheat your oven to 425. Do not put these in until your oven is preheated! Place squares of puff pastry into the muffin pan, followed by cubes of brie cheese and a scoop of cranberry sauce. Bake for 10 min and add rosemary sprigs for garnish. It’s that easy!!! #easyrecipes #holidayrecipes...

•preheat oven 400 (this will bake for 15-20 min)
•puff pastry cut into 12 equal sizes
•leftover Holiday ham for the win
•gruyere cheese (Swiss or brie work too)
•Dijon mustard
•egg brushes on the top
