The Perfect Spring Dress
Finally a week of sunshine after months of rain! It was still a little chilly but I was in a springy mood and decided to wear this amazing maxi dress.
My friend, Megan, whose daughters I teach ballet, is an awesome photographer and captured these pictures for me downtown while we got some coffee and our little ones were at school. There is the cutest little coffee shop on Second Street that I find myself frequently visiting often now that I have found it. I still have yet to make it to work dancing full time since surgery, but I think I have finally come up with a solution to help pace myself and get me there eventually. In the meantime, I need to take advantage of these very few kid-less mornings I do get and relax.
Growing tired of the rain and cold weather, I found this dress and instantly fell in love with the flower print on this gorgeous baby blue background. I wore it with some taupe sandals, which are 55% off and a straw bag that cost under $60! It also has a drawstring top so you can keep all your belongings secure inside without having to worry about it falling out the open top! This past weekend it snowed here in the foothills and now today it’s going to be 80…. Today will be spent gardening. SAVE AND SHARE THIS RECIPE! This festive #stpatricksday recipe is the perfect lunch/snack for everyone! Being the Irish gal that I am, I like to make fun recipes for the kids and this one is s favorite.
•puff pastry sheets
•corned beef (or you can use pastrami)
•Dijon mustard
•Swiss cheese
•clover cookie cutter
Preheat your oven to 400 degrees. Use your cookie cutter on the puff pastry. Add Dijon mustard, corned beef and Swiss cheese to half the clovers. Put the remaining puff pastry on top. Use a fork to put down the sides and seal the puff pastry. Then, brush egg wash over them. These will bake for approximately 20 min. Trust me…..these are super easy to make and soooo yummy! #puffpastry

SAVE AND SHARE MY MOST VIEWED RECIPE ! This is one of my favorite and most watched recipes and for good reason! My Ham and Cheese Croissant Bake is SOOOO easy to make and perfect for brunch! This can also be frozen and eaten later! Don’t take my word for it….make it and let me know how fast it was devoured.
•4 large croissants
•12-16 oz of cubed ham
•6 oz of shredded gruyere cheese
•6 oz of shredded cheddar cheese
•1/2 cup chopped chives
•6 eggs
•1 cup half and half
•1 tsp. honey
•1 tsp. Dijon mustard
•salt and pepper
Preheat your oven to 375. In a baking dish (spray with non stick spray) add in croissants, ham, cheese and chives. In a separate bowl, whisk together the eggs, half and half, honey, mustard and salt and pepper. Pour the egg mixture over the bake and press down with a fork. Cover with foil and bake for approximately 50 min. This is such a great family recipe and feeds a good amount of people. Been a little MIA the last couple weeks. It’s been jam packed with root canals, kids with pneumonia and double ear infections 😑. Spent yesterday at the Drs and then hospital for chest x-rays. In between that, Neil and I got away for a weekend to Las Vegas (my first time) and it was so fun and MUCH needed. I also loved that Neil planned it all this time (usually it’s me). He had shows and restaurant reservations all taken care of. It was a nice treat! Now, I’m dealing with getting all the germs out of this house and cleaning from top to bottom.
