My Super Simple Cherry Pie Recipe

Am I not a baking machine this last week or what?! Every year, I take the kids fruit picking in the Summer. My last recipe post was on my delicious peach crumble that you can check out, here. We also went cherry picking that day and I love love love to make cherry pie not only because it’s simple and quick to make, but it’s also scrumptious! Read on to find how easy this cherry pie recipe is to make with the help of some easy to find products in your grocery store.

I’m a mom of four and all about cutting corners and making things easier on myself if I can! So, when it comes to my cherry pie, I use some easy to use Pillsbury products to help this mama out.

Ingredients

 

6-7 cups of fresh pitted cherries (I love my OXO cherry pitter)

1/2 cup water

3 tablespoons lemon juice

2/3 cup granulated sugar

4-5 tablespoons corn starch

1/2 teaspoon vanilla extract

1 Pillsbury pie crust (bottom)

1 Pillsbury pie crust (top)

1 egg

Directions

 

  • In a saucepan over medium heat, combine cherries, water, lemon juice, sugar, vanilla and cornstarch.
  • Bring to a boil, reduce heat and cover. Stir frequently for 15-20 minutes. You may need more cornstarch if it seems to runny.
  • Let the cherry filling cool and
  • Scoop filling into the pie crust pan
  • Roll out the top pie crust and cut into long strips for the lattice top
  • Weave the strips across the pie.
  • Brush egg over the top and lightly sprinkle with sugar
  • Bake on 375 for 20 minutes and then reduce to 325 for an additional 40 min.
  • Allow 2-3 hours before cutting
