
Did you read part one on our trip to Lake Tahoe earlier in the week? You did? Awesome……Now where did I leave off? Ah yes, dogsledding…
The next morning, we woke up bright and early to pack up all of our things and head out to the other side of the lake. Our destination this time, Squaw Valley. We made a quick trip to Starbucks for some coffee and breakfast sandwiches (of course I order ahead with the app) and took the very pretty scenic drive approximately an hour away to Squaw Valley. Along the way, we stopped to take pictures. It’s just too pretty not to.



We were so nervous that, like South Lake, the snow would have melted and our dogsledding adventure would have been cancelled. However, we lucked out and Squaw Valley still had plenty of snow to play in! We parked at the Resort at Squaw Creek, which is a fantastic hotel by the way, and walked down to the meeting area. Next time we plan a trip to Lake Tahoe with the kids in tow, we have already decided Resort at Squaw Creek would make the perfect place to stay. Not only do they have dogsledding and skiing activities, but they also have an ice skating rink too.


We approached the meeting place where around 30-35 Alaskan Huskies were waiting, impatiently might I add, to take us on our journey. There were two other families sledding that day and while we waited as everyone got checked in, Neil and I pet the dogs and took some pictures. The sled was the perfect size for Neil and me. We bundled up in blankets, our camera in hand, ready for our adventure!




It was honestly one of the most fun experiences Neil and I have had together and I am so glad we did. Dogsledding was definitely the highlight of our mini vacation alone and someday we hope to come back with the kids.
After sledding and walking around for a bit, we made our way over to Olympic Village which is the perfect place to be considering. So much has changed since Lake Tahoe held the Olympics. They have an amazing shopping village filled with restaurants and fun stores. We ate at an Irish pub and had the best fish tacos we have ever had! The sauce was insane. Go figure! We also ordered spinach dip, Irish beef stew and an Irish Dip sandwich. Yes, our eyes were bigger than our stomachs. Yes, it was delicious. Yes, we ate the rest on our drive home later that day.
After lunch, we headed in to Truckee. This was my first time visiting Truckee and it’s adorable! I don’t know why it has taken me so long to visit. If you are in the area, make the stop. You will not be disappointed. My favorite place was this darling little jewelry store that carried handmade turquoise one of a kind pieces. I think Neil’s eyes popped out his head when I tried on a $4000 bracelet. What can I say, the expensive pieces always find me. Yes, they find me! I fell in love with a ring there….some day pretty ring, someday. They had a sign that said layaway and Neil and I joked as we walked outside, “Yes, can we put this jewelry on layaway for….like……3 years?” Anyway, we found a candy shop and picked out treats for the kids to bring home. We dare not come home empty handed.



It was the perfect end to our perfect weekend away. I wish we could have stayed another day longer to explore some more. However, that’s the beauty about where we live. We aren’t more than a 2 1/2 hour drive to one of the most stunning places on Earth. We didn’t get any lake pictures for you this time, but I promise next trip, I will put that at the top of my priority list. It truly is magical there.

I debated jumping on the bandwagon to share my 2016 throwback. In all honesty, 2016 was the hardest year of my life. It’s something that I’m reminded of daily in this never ending cycle of chronic pain and illness. For those that are new here, in 2016 I underwent 3 surgeries within 4 days. My 14 level spine surgery consisted of 2 surgeries going through my back and side, and then I needed an emergency bowel resection 3 days later due to my colon twisting and flipping on itself. When I woke up from my spine surgery, I immediately moved my right foot and tried to then move my left. It turned out, they knicked my spinal cord and damaged it. I had no feeling in my left leg or foot. Didn’t know if I was moving it and it felt like nothing was there. I remember immediately panicking and because I still had a tube in my mouth, they gave me a paper to write down what was wrong. Drs came in and told my husband and I that they weren’t sure if I’d walk again and definitely sure I wouldn’t be dancing. I lost 25 lbs, a Picc line was put in to try and get me any nutrition. I threw up bile in bucket after bucket.
I didn’t see my kids for 3 1/2 weeks and then had to be moved to a nursing facility. Once home, I had nurses and PT that would come to our house because staying in that facility and not seeing my kids drove me insane (my youngest was only 17 months old). Neil had to shower me, and wipe my butt 🙈. I went through 18 months of PT pushing myself to prove them all wrong. When I think about the last 10 years (and 2016 in particular), it has been a nonstop uphill battle for me. During that same year, we learned that both our daughters would then be diagnosed with the same thing. This is why I keep pushing forward no matter how I feel mentally or physically. I need to show these kids that mama can handle it and I want them to remember how strong I’ve tried to be because some day they may be faced with this same decision. I played this song on repeat laying in the hospital.

SAVE AND SHARE MY MOST VIEWED RECIPE! This is one of my favorite and most watched recipes and for good reason! My Ham and Cheese Croissant Bake is SOOOO easy to make and perfect for brunch! This can also be frozen and eaten later!
Don’t take my word for it...make it and let me know how fast it was devoured.
•4 large croissants
12-16 oz of cubed ham
•6 oz of shredded gruyere cheese
•6 oz of shredded cheddar cheese
•1/2 cup chopped chives
•6 eggs
•1 cup half and half
•1 tsp. honey
•1 tsp. Dijon mustard
•salt and pepper
Preheat your oven to 375. In a baking dish (spray with non stick spray) add in croissants, ham, cheese and chives. In a separate bowl, whisk together the eggs, half and half, honey, mustard and salt and pepper.
Pour the egg mixture over the bake and press down with a fork. Cover with foil and bake for approximately 50 min. This is such a great family recipe and feeds a good amount of people. So before ya come for me with how much cheese is used ( remember that!

•mini muffin pan
•store bought puff pastry
•brie cheese
•cranberry sauce
•fresh rosemary
Preheat your oven to 425. Do not put these in until your oven is preheated! Place squares of puff pastry into the muffin pan, followed by cubes of brie cheese and a scoop of cranberry sauce. Bake for 10 min and add rosemary sprigs for garnish. It’s that easy!!! #easyrecipes #holidayrecipes...

SAVE THIS RECIPE! These Ham and Gruyere Hand Pies are SO SIMPLE to make and DELICIOUS 🙌🏻 These make for a fun brunch/lunch idea and will be loved by all. You can also make in batches and reheat for later! You can even use that leftover ham from the holidays to make these too!
•preheat oven 400 (this will bake for 15-20 min)
•puff pastry cut into 12 equal sizes
•leftover Holiday ham for the win
•gruyere cheese (Swiss or brie work too)
•Dijon mustard
•egg brushes on the top
