Quarantine and Chill….TV shows to pass the time

Well guys…..the proverbial shit has hit the fan. Like you, I am trying to wrap my brain around the sequence of events that have taken place, regroup and stay calm. Last week, I had to close the dance studio for who knows how long, the kids schools were closed down and now the entire state seems to be on a social distancing lockdown. Just one of those alone, is enough to stress a person out. It was a shock to my system when it all happened within 24 hours. I’m sure so many of you can relate and I’m thinking about all of you, the World really, during this time. As we get used to our time at home, I wanted to create a series of posts over the next few weeks to give my subscribers ideas for TV shows, books, activities for the kids as you homeschool, recipes etc. Also, be on the lookout for our backyard reveal post! My hope is that this gives you something to read and helps pass the time. And by all means…..give my some recommendations too!

Dates Are Great! Date Energy Ball Recipe

Dates are great! Dates are Great! Ok, let me preface this by saying, dates are not every ones cup of tea. Some either love them, or some hate them. My kids, mainly the boys, refused to even try a date on its own. That’s where my plan came in (insert evil laugh) to introduce them in a way they kids would want to try them! Super simple. Super quick. And super delicious! Read on for a recipe that is sure to please anybody!

What you’ll need:

  • Blender or food processor
  • 2 cups pitted dates
  • 1 cup rolled oats
  • 1 cup peanut butter (for Nicky I make a sun butter batch)
  • 1/2 cup dark chocolate chips

Directions:

  • Remove pits from dates TIP: Soak the dates in warm water for 10 minutes. Add them to the blender and put on chop mode until they turn mashed. It’s okay if it’s a little chunky!
  • Add in oats and peanut butter. Again, you can sub peanut butter for sun butter if you have someone who has a peanut allergy. Blend together.
  • Add chocolate chips and blend again. You may have to take a spoon and mix it a bit when it gets stuck in the blades.
  • Take a spoon and scoop a good size into your hand and roll the mixture into balls (makes approx. 15)
  • Freeze for 15 minutes and take out to enjoy!

I usually put them into a zip lock gallon bag in the refrigerator and the kids will grab and go as they please. Dates are full of fiber and antioxidants and also an awesome substitute for sugar! I’ve even used them in oatmeal cookies!
