Two weeks ago, Neil and I spent our 10 year wedding anniversary away for 4 glorious days! We hadn’t been away from the kids for that long since my surgeries and I’d been looking forward to this little vacation for months. Needless to say, it was an amazing time and I am so excited to share all about it with you. After two days in Ojai, we made our way down to Santa Barbara; where we spent 2 wonderful nights at the Simpson HouseĀ Santa Barbara celebrating our anniversary and exploring the wonderful surrounding areas.
Neil and I recently took a much needed two day trip to Mendocino, Ca. It was the first time either of us had been there and boy, was it amazing. Months ago, I came across the most adorable resort in Little River, a town a few miles from Mendocino, called Heritage House Resort. I had begged Neil over and over if we could stay there at some point. What can I say, somehow, I was immediately drawn to it. So, we planned a weekend trip and dropped the kiddies off with my in-laws and made our way up the coast to Heritage House Resort.
So excited to share with you our weekend getaway to Lake Tahoe. I am so glad Neil and I are on the same page with taking a little special time away, just the two of us. Of course, we love to spend time with the kids and take them on outings, however, we have really made a conscious effort to make sure we get time alone. Whether that is dinner and a movie or a night or two away from the kids, it has been amazing for us to unwind and reconnect especially when our lives sometimes seem so chaotic. For an early Valentine’s present and to celebrate Neil’s new position at work, we packed up our jackets and snow boots and headed to the gorgeous Lake Tahoe.Ā
My husband, Neil, and I took a much needed trip for the weekend down to Holiday House, Palm Springs. We had never been there before and it was a place I have always wanted to visit. So,Ā my amazing husband made itĀ happen when we found an awesomeĀ deal on Groupon for our hotel. I was a little nervous leaving the kiddos for 3 nights. Ā However, everything went smoothly and we were able to enjoy our vacation.

SAVE AND SHARE THIS RECIPE! We LOVE camping and I always make a batch of these to take with us or to make there! Sure, we make sāmores over the fire, but these are fun to bake at home or bring with ya! You CANNOT mess this up! Itās only 4 ingredients and super easy!
ā¢milk chocolate bars
ā¢prepackaged cookie dough (or make your own from scratch)
ā¢jumbo marshmallows (I cut into 3rds)
ā¢graham crackers
Preheat oven to 375 (these will bake for approximately 10-15 min)
On parchment paper, put Graham crackers first, followed by chocolate and then marshmallows. Pile the cookie dough on top and press down. Bake for 10-15 min and there ya have it! Ooey gooey goodness! Try these #smorescookies and let me know what you think! #cookierecipe

SAVE AND SHARE THIS RECIPE! This festive #stpatricksday recipe is the perfect lunch/snack for everyone! Being the Irish gal that I am, I like to make fun recipes for the kids and this one is s favorite.
ā¢puff pastry sheets
ā¢corned beef (or you can use pastrami)
ā¢Dijon mustard
ā¢Swiss cheese
ā¢clover cookie cutter
Preheat your oven to 400 degrees. Use your cookie cutter on the puff pastry. Add Dijon mustard, corned beef and Swiss cheese to half the clovers. Put the remaining puff pastry on top. Use a fork to put down the sides and seal the puff pastry. Then, brush egg wash over them. These will bake for approximately 20 min. Trust meā¦..these are super easy to make and soooo yummy! #puffpastry

SAVE AND SHARE MY MOST VIEWED RECIPE ! This is one of my favorite and most watched recipes and for good reason! My Ham and Cheese Croissant Bake is SOOOO easy to make and perfect for brunch! This can also be frozen and eaten later! Donāt take my word for itā¦.make it and let me know how fast it was devoured.
ā¢4 large croissants
ā¢12-16 oz of cubed ham
ā¢6 oz of shredded gruyere cheese
ā¢6 oz of shredded cheddar cheese
ā¢1/2 cup chopped chives
ā¢6 eggs
ā¢1 cup half and half
ā¢1 tsp. honey
ā¢1 tsp. Dijon mustard
ā¢salt and pepper
Preheat your oven to 375. In a baking dish (spray with non stick spray) add in croissants, ham, cheese and chives. In a separate bowl, whisk together the eggs, half and half, honey, mustard and salt and pepper. Pour the egg mixture over the bake and press down with a fork. Cover with foil and bake for approximately 50 min. This is such a great family recipe and feeds a good amount of people.
