A Winter Weekend
Brrrr….This weekend we took a spur of the moment trip to see Grandparents up near Yosemite. Since it snowed all week, we wanted to get a trip in before it all melts away. Anyone with kids knows how fun dragging them out of bed early and packing the car full is. We had to drop our key off at my friends house since she was going to check in on our dog. Literally five minutes into our 3 hour drive, we pull up to her house and our 7 year old asks if we are there yet. “There” as in our final destination. Insert “This is going to be so much fun. I’m being super sarcastic” emoji. Luckily we only had to stop once more for food, gas and a quick trip to Walmart for the forgotten sippy cups for our 2 year old. Winter Wonderland, here we come!
The weather was amazing. I was able to exchange my down jacket and snow pants for a cozy Vince sweater and jeans. I have a closet full of Vince items that never go out of style that I circulate through with new accessories each season. I paired it with a J Brand cotton turtleneck, AG Jeans leggings, and some amazing Kenneth Jay Lane emerald earrings (similar). They have the clip on version available on Amazon(here). My boots are by Sorel. Not only are these ultra warm and waterproof, they have an equally amazing twin version for men! Being out in the snowy woods is so relaxing. We saw a family of eight deer wandering around the property and all I could think about was how peaceful and calming it was being there. Sometimes it’s a much needed break away from our crazy, daily lives. The kids got to see their Great-Grandparents and bond together playing in the snow. Life is good.

This past weekend it snowed here in the foothills and now today it’s going to be 80…. Today will be spent gardening. SAVE AND SHARE THIS RECIPE! This festive #stpatricksday recipe is the perfect lunch/snack for everyone! Being the Irish gal that I am, I like to make fun recipes for the kids and this one is s favorite.
•puff pastry sheets
•corned beef (or you can use pastrami)
•Dijon mustard
•Swiss cheese
•clover cookie cutter
Preheat your oven to 400 degrees. Use your cookie cutter on the puff pastry. Add Dijon mustard, corned beef and Swiss cheese to half the clovers. Put the remaining puff pastry on top. Use a fork to put down the sides and seal the puff pastry. Then, brush egg wash over them. These will bake for approximately 20 min. Trust me…..these are super easy to make and soooo yummy! #puffpastry

SAVE AND SHARE MY MOST VIEWED RECIPE ! This is one of my favorite and most watched recipes and for good reason! My Ham and Cheese Croissant Bake is SOOOO easy to make and perfect for brunch! This can also be frozen and eaten later! Don’t take my word for it….make it and let me know how fast it was devoured.
•4 large croissants
•12-16 oz of cubed ham
•6 oz of shredded gruyere cheese
•6 oz of shredded cheddar cheese
•1/2 cup chopped chives
•6 eggs
•1 cup half and half
•1 tsp. honey
•1 tsp. Dijon mustard
•salt and pepper
Preheat your oven to 375. In a baking dish (spray with non stick spray) add in croissants, ham, cheese and chives. In a separate bowl, whisk together the eggs, half and half, honey, mustard and salt and pepper. Pour the egg mixture over the bake and press down with a fork. Cover with foil and bake for approximately 50 min. This is such a great family recipe and feeds a good amount of people. Been a little MIA the last couple weeks. It’s been jam packed with root canals, kids with pneumonia and double ear infections 😑. Spent yesterday at the Drs and then hospital for chest x-rays. In between that, Neil and I got away for a weekend to Las Vegas (my first time) and it was so fun and MUCH needed. I also loved that Neil planned it all this time (usually it’s me). He had shows and restaurant reservations all taken care of. It was a nice treat! Now, I’m dealing with getting all the germs out of this house and cleaning from top to bottom.
