Valentine’s Day Dessert Recipe: Raspberry Tart

Cooking a meal at home for your lovie or need a dessert for Valentine’s Day? Not only is this easy to make, it’s pretty and delicious too! Frequently, my four year old requests to watch Martha Bakes on PBS (which I think is adorable). We saw a recipe for a raspberry tart made last year and immediately made it the next day. My husband was impressed and the kids enjoyed it. It’s definitely a statement of a dessert and super easy to make. Read on below for my take on Martha’s recipe for a raspberry tart!

Raspberries are definitely one of my favorite fruits. I eat them by the handful, make mojitos, and bake them in berry pies. What is not to love about raspberries? If you don’t fancy raspberries, you can easily use ANY fruit with this recipe. Since it’s Valentine’s Day, I thought the red color would work perfect for the special day.

Raspberry Tart

 

Ingredients you need:

 

  • 2 sheets puff pastry ( I purchase the two pack of Pepperidge Farms puff pastry sheets in the frozen pie crust section and follow directions on letting it thaw before use)
  • 1 large egg lightly beaten
  • 1/3 cup sugar
  • 1 cup mascarpone cheese
  • 1 teaspoon grated lemon zest
  • 1/4 teaspoon of vanilla extract
  • 1 cup heavy cream
  • 3 pints of fresh raspberries

 

Directions:

 

  • Preheat your oven to 400 degrees. On a piece of parchment paper, spread some flour and sugar around and lay the puff pastry on top.
  • Once thawed, roll the puff pastry out to make a larger rectangle.
  • Cut 1 1/4 inch stripes off the second piece of pastry with a pizza wheel or knife.
  • Using your egg wash, brush some along the edges of the larger rectangle placing the cut strips on top. I actually used the back of an old plastic baby spoon since my brush was nowhere to be found. Kids!
  • Press down to make them stick and then put in the freezer for 10-15 minutes.

 

  • Take it out of the freezer and using a knife, cut along the edges of the puff pastry diagonally.
  • Use a fork to poke some holes in the center
  • Place in the oven for 30 minutes or until golden brown

 

  • In a bowl, mix together and beat the mascarpone cheese, 1/3 cup sugar, vanilla extract and lemon zest.
  • add in the heavy whipping cream and beat until it’s a creamy stiff consistency (a little thicker than whipped cream).
  • Spread the mixture on top of the COOL pastry puff. I stuck my crust in the refrigerator for approximately 30 minutes before application.
  • Top with fresh raspberries and stick in the refrigerator for another 15-30 minutes before serving. And voila!

 

Tonight, I made this raspberry tart while also going back and forth making dinner between steps. It really is an easy recipe and tasty too! You just can’t go wrong!

Funny story…..while I made the tart today, I left the room to grab something out of the refrigerator in our garage and came back to a row of raspberries missing off the tart! My sneaky four year old snatched a few and ran. Luckily, I had more to add on!

Well I feel accomplished today! Took four CRAZY kids to Target, Safeway AND Costco, made a shredded chicken taco casserole and this fabulous raspberry tart! Now, I am off to clean up the kitchen and possibly drink a glass of wine. I’d say I earned it today.
